Vegetable Biryani in 20 minutes

Hello Everyone!!!

This is an improvised version of this dish as it takes only 20 minutes to be cooked.
For this dish, we need,

Ingredient 1

rice 4 cups (measured to be cooked in rice-cooker)

Ingredient 2

frozen mixed vegetables soaked in water
onions (3, sliced into rings)
green chillies (5-6 chopped)
tomatoes (2 medium chopped)
ginger-garlic paste (1 tablespoon)
salt (to taste)
cumin powder (2 teaspoon)
coriander powder (2 teaspoon)
fenugreek seeds (1 teaspoon)
cumin seeds (2 teaspoon)
yogurt (1 small cup)
ghee (4 tablespoon)

Instructions

Cook rice in rice-cooker which takes around 20 minutes to be cooked. Meanwhile, in a deep frying pan, add ghee in medium heat. Then, add fenugreek and cumin seeds. When they are heated to be brown, add onions and green chillies. By the time onions are golden brown, add ginger-garlic paste and then cumin powder, coriander powder, turmeric powder and lastly salt. After slightly cooking these ingredients, add mixed vegetables (water should be drained). After adding vegetables, slightly level up the heat and stir few minutes. If water comes from vegetables, cook longer until its dried up. Then add tomatoes and put lid on it. Wait until it looks dry and then add lemon, stir it and lastly add yoghurt. Stir the mixture and cook for 2 minutes. By the time its ready, rice is cooked as well. Stir rice in the cooker and add this mixture in there and mix everything together.

Serve it with your curry or daal. :)

Chicken Choila in 15 minutes

Hello Everyone!!

I have prepared a very easy but quite popular dish in Nepal called Choila. This is normally prepared with buffalo grilled meat. However, for day-to-day easy serve, I have prepared this dish with boiled chicken and it is as easy to prepare as it looks.

Here, I have separated my ingredients into 3 sections to make it easy to understand. I have,

Ingredients 1

600 g of diced chicken
salt (2 teaspoon)

Ingredients 2

spring onion (3-4 chopped)
tomatoes (2 chopped)
green chillies (6-7 finely chopped)
coriander (6-7 chopped)
lemon (1)
dried chilli flakes (2 teaspoon, optional)
cumin powder (2 teaspoon)
coriander powder (2 teaspoon)
salt (to taste)
red onions (3 sliced)
red chilli powder (3-4 teaspoon, optional)
olive oil (5-6 tablespoon)
ginger-garlic paste (1 tablespoon)

Ingredients 2

olive oil (3-4 tablespoon)
fenugreek seeds (1 teaspoon)
turmeric (3 teaspoon)
cumin seeds (3 teaspoon)

Instructions

First of all, boil water in a vessel. While water is boiling, add chicken and 2 teaspoon of salt. Boil chicken for 7-8 minutes. Do not overcook chicken to avoid rubbery and chewy texture. After chicken is cooked, drain water.

Mix ingredients 1 and 2 in 1 big bowl.

Then, in one pan, heat olive oil and add fenugreek and cumin seeds. When seeds turn into dark brown add turmeric powder and immediately add this to other ingredients.

Lastly, mix everything together.
